Meal Solution: Chili Chicken Mac (Recipe)

Phew! Busy. Busy. I’m so glad today is a Walmart Meal Solution day. I definitely needed a quick and easy meal to serve tonight. My mother (her more so than me) and I have started “garden week” since the weather is scheduled to be gorgeous for most of the week. After homeschooling, blogging opps, and cleaning, I’ve been outside helping her prep our vegetable gardens or playing with the kidlets in the backyard. After all of the days activities I’ve been too tired to cook anything that would take more than 30 minutes to prepare. Ideally I’ve been shooting for meals that are done in approximately 15 minutes.

    Today’s Walmart Meal Solution is Chili Chicken Mac:

  • Kraft Mac & Cheese, 7.25 oz
  • Great Value Chicken Breast, 12.5 oz
  • 5th Season Chili Powder
  • Great Value Chunky Medium Salsa
  • Betty Crocker Chocolate Chip Cookies

If you are curious how to use some of the ingredients in this week’s meal solution, I’ve shared the recipe that I used today adding in a few extra ingredients (that might be in your pantry).

Chili Mac ingredients


Chili Chicken Mac
1 can (12.5 oz) Great Value Chicken Breast
1 Family Size box Kraft Deluxe Macaroni and Cheese
1 can (15.5 oz.) Red Beans
1 ½ tsp onion powder
2 tsp chili powder

For Bake Option:
½ cup crushed corn chips

Directions:
Cook macaroni and cheese according to package directions. Drain and return to pot. Add cheese sauce, onion powder, chili powder, chicken and beans to cooked, drained macaroni. Stir until mixed evenly.

Add more chili powder for a spicier kick….we have mild tastebuds in our household :)

Chili Mac Bake


For the Baked version:
Preheat oven 350°F.
Grease an oven safe dish and transfer macaroni mixture to baking dish. Top with crushed corn chips and bake for 10-15 minutes or until heated through.

    This sounds pretty good. I like using chili powder when I cook, for anything. I think I made a chili mac before but I don't remember what exactly I used. Garden Week? You must not live anywhere near me. We're working on another foot of snow outside after the last 2 or so just finally melted away a day or so ago.

    I'm in the south and it has been in the seventies for the past week and a half!!! It is so beautiful outside. Trying to soak up every minute of it before it either turns cold over night or gets ruined by rain :) Good luck on the snow! I know there has definitely been a lot of the white stuff floating around this year.
