The holidays aren’t over just yet. You may have been entertaining friends and family this week which means you may have a few leftovers taking up space in your fridge. If you are looking for a way to freshen up your leftover turkey then I might have the perfect recipe for you. Turn that leftover turkey into a delicious new recipe, Homemade Turkey and Dumplings.
Whether you are looking to stretch out your remaining leftover turkey for just one more meal or you are looking to change it up to something different, Homemade Turkey and Dumplings is a spin on traditional chicken and dumplings and a great use for holiday leftovers. As a part of the Walmart Moms, today I’ll be sharing how simple it is to put this meal together using leftover turkey and additional ingredients that can easily be found at Walmart.
Turkey & Dumplings Recipe
- 4 cups leftover turkey, cubed (white and dark meat)
- 1 1/2 cup carrot chips
- 1 cup celery, chopped (about 2 stalks)
- 1 tbsp thyme
- 1/2 tbsp pepper
- 1/2 tsp. tumeric
- 1 1/2 cup chopped yellow onion
- 12 cups chicken broth
- For the Dumplings:
- 1 1/2 cup all purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup chicken stock
- For the Gravy:
- 1 tbsp corn starch
- 1 tbsp cold water
- 4 cut hard boiled eggs
Combine turkey, carrots, celery, thyme, pepper, onion, and chicken broth in a large stock pot. Bring to a boil on high heat. Reduce heat to medium, cover and simmer for 30 minutes.
While the soup is simmering prepare the dumplings by combining flour, baking soda, salt, and chicken stock. Roll the dough out onto a floured surface about 1/4 inch thick. With a knife cut the dough into square, bite sized pieces.
After the soup has simmered for 30 minutes, drop dumplings in the soup one by one. Stir to prevent sticking and cook for an additional 5-10 minutes or until dumplings are at desired tenderness.
In the south, we love to serve our turkey and dumplings with fresh cornbread cooked in a cast iron skillet.
