One pot meals for those that aren’t familiar with the term are meals that are prepared only using one single pot. You put all of the ingredients into the pot and cook until done. The end result is incredibly delicious and satisfying. My favorite aspect of one pot dinner recipes is that they are quick to make. I don’t have to be doing a million different things in a specific amount of time so that everything is cooked in the end. Just throw everything in a pot, set a timer, serve into bowls, and done! One pot dinner recipes are the perfect answer for when you need to prepare a meal for your family and fast!
One Pot Italian Pasta Recipe
- 2 tbsp olive oil
- 1 tbsp minced garlic
- 3 ups crushed tomatoes (28 oz can)
- 4 cups chicken broth
- 1 lb rotini
- 2 tbsp dark brown sugar
- 2 (15.5 oz) cans of light kidney beans, drained
- 1/2 tsp Worcestershire sauce
- 1 tbsp dried minced onion
- 1 tbsp parsley
- 1/2 tsp seasoning salt
- 1 tsp paprika
- 1/2 tsp Italian seasoning
- dash of pepper- to taste
- 1/4 cup grated Parmesan cheese
- 8 oz mozzarella cheese, shredded
Heat olive oil in large stock pot over medium-high heat, add garlic and cook 1-2 minutes. Add tomatoes, chicken broth, dark brown sugar, rotini, kidney beans, Worcestershire sauce, and all seasonings to the pot. Stir until combined. Raise heat to high until it begins to boil. Reduce the heat to medium-high to simmer for approximately 15 minutes or until pasta is tender and most of the liquid has been absorbed. Turn off the heat, stir in the Parmesan cheese. Ladle into bowls and top with desired amount of mozzarella cheese.
Makes approximately 6-8 servings.
