Am I the only one that gets a bit excited when they see a new product on the grocery store shelves? My mind always races as to if and how I could use it in a recipe. As a part of the Walmart Moms, I was recently sent a box of new products that are in their Walmart stores across the country to try out for myself. The mission was to use my favorite product in a recipe.
Let’s take a look at what was in the box…
Pasta Gourmet Ocean Adventure Pasta – I love these fun pasta shapes, and so do my kids. Check out this Quick Fix Shrimp & Broccoli Fun Shaped Pasta Recipe for Busy Family Nights. This pasta is made with 100% all natural ingredients. They are GMO free with no added salt or sugar. It is made of Durum Wheat and naturally colored using dry tomato and spinach.
Marukan Seasoned Gourmet Rice Vinegar – I’m glad to see that Walmart carries this product in their stores as it is a staple in many of my favorite asian dishes. This rice vinegar is low in sugar and sodium, and fat-free.
Nandos Peri Peri Sauce – This sauce has a spicy kick as it is made with African Bird’s Eye Chilli plus a blend of sun-ripened lemons, onion, garlic, and other spices. If you are a fan of spice, you might like this one.
Hidden Valley Ranch Greek Yogurt Dressing Mix – a ranch dressing mix blended with nonfat Greek yogurt and milk for a dip that contains less fat & more protein for your next get together.
Kikkoman Orange Sauce – one of my favorite asian dishes is orange chicken on a bed of jasmine rice. This orange sauce takes all of the guess work out of how to make this tasty take out meal at home. Made with traditionally brewed Kikkoman Soy Sauce, real orange juice concentrate, a splash of vinegar and a touch of garlic and onion, the only thing you need to add to this Kikkoman Orange Sauce is cooked chicken!
Wish Bone Ristorante Italiano Dressing Garlic Parmesan – Definitely my favorite from all of the products that I tired. This vinaigrette has a blend of oils, vinegar, artisanal cheeses and spices which taste like something you would find at a restaurant. But it’s not just for salads as I’ll show you how I used it in the recipe below for an overnight marinade on boneless, skinless chicken breasts.
One Pot Garlic Parmesan Chicken Pasta Recipe
- 2 lbs boneless, skinless chicken breast- cubed
- 1 tbsp olive oil
- 2 tbsp butter
- 1 cup chopped sweet onion
- 2 cups baby leaf spinach
- 1 cup shredded carrots
- 1 tbsp minced garlic
- 1 lb rotini pasta
- 1 cup whole milk
- 4 cups chicken stock (32 oz)
- 2 cups water
- 1/2 tsp thyme
- 1 1/2 cups Parmesan cheese
- If desired: salt and pepper to taste
First, prep the night before by cubing 2 pounds of boneless, skinless chicken breast. Place in a bowl and barely cover with Wish Bone Ristorante Italiano Garlic Parmesan Vinaigrette (I used about half of the 12 fl oz bottle). Toss to make sure every piece is evenly covered. Then cover the bowl and place in refrigerator to marinate overnight.
In a large pot, heat olive oil on medium-high heat. Add marinated chicken and cook until thoroughly cooked through and golden brown in color. Once chicken is completely cooked, then add butter and onions until onions are translucent in color. Next add spinach, carrots, and garlic to the pot and cook an additional 5 minutes or until spinach is wilted. Then add chicken stock, water, milk, thyme, and pasta to the pot. Turn heat up to high to bring mixture to a boil. Once boiling, reduce heat to medium to medium-high and simmer for 15-20 minutes or until the majority of liquid has reduced and pasta is tender. Remove from heat and stir in paremsan cheese. Let stand for 5-10 minutes before serving to allow sauce to thicken.
I liked the use of the Wish Bone Ristorante Italiano Garlic Parmesan Vinaigrette in this dish as a marinade. It made the chicken tender, moist, and full of flavor in each bite. I also like that I can easily find everything I need to make this recipe at Walmart. Those “matchstix” carrots can be found already cut into thin shred in the produce section at Walmart with the other bagged baby carrots. Buying pre-cut saves time and effort in the kitchen when you are in a hurry to get dinner on the table for your family.
