Breakfast is the only time of day that I am not in the kitchen cooking. I’m not a big breakfast person. While some mornings I may crave something to eat there are other mornings where I might skip breakfast completely. Keeping it simple for breakfast is a must in our household. Sometimes simple is just better, just like my family’s other breakfast favorite, peanut butter & banana topped toast. Keeping breakfast simple helps our family by giving Mom a break in the kitchen. Also, it helps teach the kids how to be independent by taking charge of creating one of their own meals.

What I love about Buddha bowls is how customizable they are depending on your individual taste or nutritional needs. You can easily make buddha bowls sweet or savory. You can also serve them any time of day from breakfast to dinner to snack time. The buddha bowl I am sharing with you today is one that my family and I love to make especially when there is fresh fruit in the house.

While you certainly could use those small yogurt cups to create a buddha bowl, I prefer to purchase the larger tubs of yogurt in my family’s favorite flavor, strawberry banana. Not only are the larger tubs of yogurt available at the grocery a better buy to save you money but you also get more servings per container and can easily use it to make a variety of meals from breakfast buddha bowls to smoothies.

Ingredients
  

  • 1 cup yogurt (favorite flavor)
  • 2 tbsp chia seeds
  • 2-3 favorite fruits
  • 1 tbsp hemp seeds

Instructions
 

  • In a bowl, combine yogurt and chia seeds until mixed together well. Allow to sit for 10 minutes or until chia seeds are plump.
  • Cut up 2-3 of your favorite fruits into cubes and place on top of yogurt.
  • Sprinkle hemp seeds (or other seeds that you prefer) on top of your buddha bowl. Then, enjoy!

Don’t have time in the morning to make breakfast?

No worries. The yogurt and chia seeds are best when made ahead of time. I like to store the yogurt chia combination in glass jars in the fridge. In the morning, I just grab a jar plus my favorite toppings and I have breakfast ready to eat in less than 5 minutes.

I love how portable a buddha bowl is. Loading up your buddha bowl with healthy options is easy and you can easily take it with you around the house or on-the-go. The way our family enjoys buddha bowls the most is by eating them while doing our homeschool lessons in the morning.
