Smashed Yams

Ingredients:

  • 7-8 medium yams
  • 1 cup packed brown sugar
  • 1 tbsp cornstarch
  • 1/2 cup buttermilk
  • Cinnamon [optional]

Directions:

Wash yams. Boil all yams in a large pot with the skins on for 20 mins or until a fork can easily be inserted into the yam. Drain, and let cool until you are able to hold them. Peel of the skins. In the same pot that you cooked the yams in, combine all the ingredients with whole peeled yams. With an electric hand mixer beat until smooth. Transfer to an oven safe dish. Top with a couple sprinkles of cinnamon.

In a preheated 350°F oven, bake for 15-20 mins.
