Apple Clafouti

The following has been adapted from the original by Michael Chiarello.

Ingredients:

-Batter

  • 1/2 cup all purpose flour
  • 1/3 cup + 2 tbsp sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup buttermilk
  • -Apples

  • 4 tbsp butter
  • 1 1/2 c. sliced apples
  • 1/4 tsp salt
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • Directions:
    Preheat oven to 400°F.
    Mix ingredients for batter and store in refridgerator while preparing apples.
    In an iron skillet, melt butter. Add apples. Cook until soft. Add sugar and salt. Cook until sugar is melted. Remove from heat add vanilla extract. Stir. Pour batter on top of apples in skillet. Cook in oven for 15 minutes or until edges are brown and center is set.
    Let rest out of oven for 5 minutes. Serve warm, topped with powdered sugar.
