It’s back to school time which means getting back into the groove of a daily routine. The school year is often a very busy time for families. When it comes to the end of a long, busy day it’s often seems like too much work to come up with a meal that everyone will love. But with a little planning, one can easily have delicious dinner on the table in less than 30 minutes with just a few ingredients.

Since school began for us a few weeks ago, I’ve made an effort to create a meal plan every week. Not only does this help with my weekly grocery shopping trip but it also eliminates those “what’s for dinner” questions. By looking at my week a head each weekend, I’m able to determine what days are going to be my busiest and what days will be a little less stressful. For hectic days I know that I need to plan our dinner to be as simple as possible. A simple meal, very few ingredients, and definitely something that will take me less than 30 minutes to prepare.

Today, as a part of the Walmart Moms, I’m sharing with all of you a simple meal that I like to prepare for my family on busy nights. This recipe uses one large pot and is sure to be favorite by everyone in the family. If you like mac & cheese then you may like this version using shrimp, broccoli, and other ingredients that can easily be found at Walmart.

    Cheesy Shrimp and Broccoli Pasta Bowl

  • 1 lb elbow macaroni noodles (about 4 cups, dry)
  • 4 cups broccoli florets (12 oz)
  • 60-80 raw, small shrimp- thawed (peeled, deveined, tail-off)
  • 4 cups sharp cheddar cheese- finely shredded (1 lb.)
  • 2 1/2 cups whole milk
  • also needed:

  • 2 tbsp flour
  • 4 tbsp sweet cream, salted butter
  • salt and pepper to taste
  • Directions:
    Bring large pot of water to a boil. Add 1 lb of elbow macaroni noodles. Stir. Reduce heat to medium-high. Cook for 3 minutes. Add thawed shrimp & broccoli florets. Continue cooking 7-8 minutes or until macaroni is cooked al dente and shrimp has been fully cooked. Drain.
    Return pot to stove and melt butter over medium-high heat. Add flour and cook for about 1 minute. Add in milk and cook an additional 5 minutes. Add shredded cheese, stirring until completely melted. Stir in cooked macaroni, broccoli, and shrimp. Serve in bowls as main dish. Season with salt and pepper to taste.

    Makes 6 servings
